Winemaking Made Easy: Step-by-Step Guide

  1. Primary Fermentation: Begin by sanitizing all equipment. Mix 2 liters of hot water with bentonite before adding the juice base. Top off the fermenter with quality cool drinking water until you reach 23 liters. If included, stir in oak chips or granules. Take a hydrometer reading on Day 1 to document the specific gravity (S.G.) and sprinkle the dry yeast over the juice base. Seal the fermenter and keep it warm (20°C to 25°C / 68°F to 77°F) throughout the fermentation period.

  2. Stabilizing/Degassing: On Day 14, check the S.G. If it falls outside the desired range, recheck after 48 hours. Carefully siphon the wine into a sanitized carboy, discarding the sediment. Add the sulphite and sorbate mix and agitate with a stirring spoon. If provided, stir in one packet of kieselsol, saving a second for later. Fit the airlock into the neck of the carboy and let it sit for 24 hours.

  3. Clearing: On Day 15, if you have any reserves, stir them into the carboy along with Chitosan. If applicable, wait one hour and then add the second packet of kieselsol. If you have oak cubes, add them as well. Replace the lid and keep the wine in a warm area away from heat and light for five days. After this period, gently twist the carboy to aid in sediment settling before following any additional clearing instructions provided.

  4. Polishing Rack/Aging: Your wine should be bright and clear at this stage. If it's still unclear, allow it to sit for an additional 7-14 days. Carefully rack the wine off the sediment into a clean carboy, using a solid bung.

  5. Bottling: Siphon your finished wine into sanitation-ready bottles. Cork them and store upright for 3-5 days for the cork to expand. Afterward, you can choose to store bottles on their sides to maintain moisture.
